Loaded Bean Burrito

        Ingredients:
  • 1 can of refried beans, or 1 can of black beans, rinsed and mashed
  • 1 cup finely diced purple or yellow onion
  • 1/4 tsp finely diced green, red, or yellow pepper
  • 1 cup of frozen or canned corn
  • 1 TBLS  of garlic powder
  • 1 1/2 tsp onion powder
  • 1 tsp oregano
  • 1/4 tsp cumin
  • 2 tsp chili powder
  • 2 tsp lime juice
  • 3/4 cup Mason Dixon's Smoked Salsa
  • 1 cup pepper jack cheese
  • Lettuce, shredded
  • tomatoes, diced
  • Mason Dixon's Smoked Salsa (topping)
  • Sour cream (topping, optional)

Directions:

1.) Sautee onions and peppers in EVOO or avocado oil until translucent. When they get near to being ready, add your corn.


2.) While those are cooking go ahead and shred your cheese and prep your other toppings.


3.) Add your beans to the onion and pepper pan. Add all spices and simmer for about 15-20 minutes to allow the flavors to come together.


4.) Put your mix on a flower or corn tortilla.


5.) Add optional  toppings,  Mason Dixon's Smoked Salsa,  serve, and enjoy!
