Smoky Black Beans &  Rice

  • 7.6 oz box Ole El Paso Spanish Rice (or any brand you prefer)
  • 15 oz can of black beans, drained and rinsed
  • 1 cup of frozen corn
  • 15 oz can of petite diced tomatoes
  • 3/4 Cup of Mason Dixon's Smoked Salsa
  • 1/2 tsp oregano
  • 1 tsp chili powder
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • Tomatoes, diced (optional, topping)
  • Fresh cilantro, finely chopped (optional, topping)
  • Avocado, diced (optional, topping)
  • Sour Cream (optional, topping)
  • Salt & Pepper to taste


1.) Make the rice as directed on the box, but also add the beans, corn, and tomatoes, and all the dry spices before covering to simmer.

2.) Chop all toppings while it cooks.

3.) Stir in your Mason Dixon's Smoked Salsa, add toppings, serve, and enjoy!
